Ingredients Serving: 4

  1. 3 large eggs separated
  2. 30 gms cocoa powder
  3. 75 gms caster sugar
  4. For the filling & icing - 25 gms butter
  5. 75 gms dark chocolate broken into squares
  6. Fruit sauce as required
  7. 1 tbsp golden syrup
  8. 100 gms icing sugar sifted
  9. Sugar leaves and flower to decorate

Instructions

  1. Whisk the egg yolks with the caster sugar until the mixture is very light and frothy. Fold in the cocoa powder.
  2. Bake the cake in an oven at 180°C for 15 minutes or until the cake springs back when lightly touched in the center.
  3. Remove the cake from the oven and turn it out on to a sheet of parchment, dusted with icing sugar.
  4. Leave the lining paper on the cake, and cover the whole thing with a clean, damp tea towel. Leave the cake to cool completely
  5. Take off from the heat and stir in the syrup and cream. Beat in the icing sugar until smooth.
  6. Whisk the remaining cream until it holds its shape. Spread the cream over the top of the cake, then carefully roll up again into a log.
  7. Spread the icing over the log, use a fork to mark the icing to give the effect of a tree bark.
  8. Decorate with fruit sauces, icing sugar, leaves and flowers.
