Breast of chicken stuffed with fresh spinach and creamy cheese

Ingredients Serving: 2

  1. Chicken breast 2 nos
  2. Salt to taste
  3. Crushed pepper corns 50 gm
  4. Lemon 2 no
  5. Basil/ thyme 1 tbsp
  6. Shallots - 150 gm
  7. Spinach - 1 bunch
  8. garlic- 1 pod
  9. Cheese( cheddar or parmesan) - 150 gm
  10. Oil- as required

Instructions

  1. Clean the breast of chicken and flatten with a meat hammer
  2. Marinate with lime juice, salt and herbs
  3. For the stuffing, heat oil saute minced shallots and garlic, stir well
  4. Add shredded blanched spinach season with pepper
  5. Mix in grated cheese adjust seasoning
  6. Place the stuffing in the center of breast length wise
  7. Carefully roll and tie with a string
  8. Quickly sear in hot brow butter in a pan
  9. Cook and finish in the oven
  10. Once done slice the roulade and serve with julienned carrots, cabbage, capsicum and potato chips
