Kaju Katli

Ingredients to make Kaju Katli

  • cashew 1 cup
  • sugar 1/2 cup
  • water 1/4 cup
  • Milk 1 tablespoon
  • ghee 1 teaspoon
  • Few strands of saffron/Kesar

How to make Kaju Katli

  1. Grind the cashew to fine powder,dont over blend the cashews or it will release oil.
  2. Seive the powdered cashew and keep aside
  3. In a non stick pan take sugar and water and place it over the gas on a medium flame .
  4. Stir so that sugar dissolves ,add in milk and saffron
  5. You will see bubbles appearing and soon it will reach one thread consistency.
  6. Let it boil further more for few seconds then add cashew powder and ghee and continue to stir.
  7. Keep an eye while you stir ,stir till it leaves the sides of the pan .
  8. You will see dough is formed ,switch the flame off and stir .
  9. Remove the mixture over a greased plate or on a butter paper .
  10. Take a big sheet of butter paper and keep the dough inside cover with the other half of the butter paper and roll it thinly with a rolling pin.
  11. Using a sharp knife cut into diamonds shape and enjoy hmemade kaju katli .

My Tip:

Bring the cashew to room temperature before grinding. The grinder should be clean and dry . You can add a pinch of cardamom powder while sugar is been dissolved .
