Ingredients Serving: 4

  1. Mutton(Goat meat)- 500 gms
  2. Ghee- 2 tbsp
  3. Mustard Oil-1 tbsp
  4. Cinnamon-1 inch piece
  5. Green Cardamon-2
  6. Cloves-3
  7. Cumin Seeds-1 tbsp
  8. Bay leaf- 1
  9. Cumin Powder-1 tsp
  10. Coriander Powder-1/2 tsp
  11. Raisins-10 pieces
  12. Cashew Seeds-5 pieces
  13. Poppy Seeds- 2 tbsp
  14. Charmagog Seeds- 2 tbsp
  15. Hung Curd-2 tbsp
  16. Red chilli powder-1 tsp
  17. Turmeric Powder-1 1/2 tsp
  18. Ginger- 2 inch piece
  19. Salt to taste
  20. Sugar to taste

Instructions

  1. Clean and wash the mutton pieces. Marinade the mutton with curd, turmeric, coriander and Cumin powder with the 1 tblsp raw mustard oil and salt for 2 hour.
  2. Meanwhile roast the cumin seeds on a warm frying pan for a minute. Put the roasted cumin with the poppy seeds, Cashews,raisins,ginger and the charm agog seeds in grinder with a tbsp of water and make paste.
  3. Add Ghee to the pan on high heat and add the whole spices(Cardamom,cinnamon,cloves & bayleaf). Once the spices starts to crackle add the meat along with all the marinade and start browning the meat on high heat.
  4. Once the meat is browned which will take around 10 mins lower the flame and add the wet paste and mix it with mutton.Keep stirring the mutton continuously to avoid the meat getting burnt. Keep stirring for 15 mins at a low flame.
  5. Add the salt,sugar and mix again. After another 5 mins of stirring add a little luke warm water to the meat. Put the meat in a pressure cooker for 5 whistles.
  6. Once mutton is ready garnish it with lime wedges,green chillies,cashews and have with hot basmati rice.
