ABOUT Mutter dry fruit Kebab RECIPE

A classy mutter kebabs filled with dry fruits cooked in pure ghee perfect snack to be served during festival time. My mom use to make this during festival time.

Ingredients Serving: 4

  1. For Kebab Mixture :
  2. 11/2 Cup blanched and blend green peas
  3. 1 Cup boiled and mashed chana dal
  4. 1 tablespoon oil
  5. 1 tea spoon cumin seeds
  6. 1 Teaspoon chilly powder
  7. 1/2 teaspoon cardamom powder
  8. 1/2 teaspoon garam masala
  9. 1 tablespoon bread crumbs
  10. 1 tablespoon chopped coriander
  11. Salt according to taste
  12. For filling :
  13. 2 Tablespoon raisins
  14. 2 Tablespoon cashew-nuts
  15. 2 Tablespoon green pistachio
  16. 1 Tablespoon chopped green chillies
  17. 1 Tablespoon chopped green coriander
  18. 1 Tablespoon ginger julienned
  19. 2 Tablespoon pure ghee for shallow frying

Instructions

  1. First of all blanch and blend peas to paste Boil chana dal and mash it to a coarsely grind paste and keep aside
  2. In a pan, take 1 tablespoon cooking oil, add cumin seed and boiled chana dal. Cook it for 4 to 5 min, let it be bit dry now then add green peas paste to this and cook it for 4 to 5 minutes
  3. Now add salt and all other spices and cook for 2 minute and transfer this in a bowl
  4. In a mixture add chopped coriander leaves and bread crumbs mix it well and form a smooth dough
  5. In another bowl add all the ingredients for filling (raisins, cashew-nuts, pistachio, green chillies, coriander, ginger)
  6. Now take a portion of peas mixture on your palms flat it, fill it with the filling mixture and roll it into patties. Repeat this step with rest of mixture and form 10 -12 patties
  7. In a pan add oil and shallow fry patties till golden brown.
  8. Mutter dry fruit kabab is ready serve it hot with mint chutney and onion rings......
