ABOUT Suryakala RECIPE

This sweet is one if the must haves in diwali. This is my first try and turned excellent. Hope you will like my efforts.

Ingredients Serving: 10

  1. For dough
  2. 400 gms all purpose flour.
  3. 1 Tbsp clarified butter
  4. 1 pinch salt
  5. Water as needed to make a tight douh
  6. For Filling
  7. 200 gms khoya (ricotta cheese but lesser in moisture content)
  8. 50 gms chopped nuts like raisin,almond,and cashew
  9. 2 tbsp Sugar
  10. 1/2 tsp Cardamom powder
  11. Oil for frying.
  12. For Syrup
  13. 1 cup sugar
  14. 1/2 cup water.

Instructions

  1. First we will make the dough
  2. For the dough add clarified butter and salt to the all purpose flour and mix well.
  3. Now slowly add water to make stiff dough. Cover this and keep it aside.
  4. For filling mash khoya and add in sugar,cardamom powder,nuts and mix well.
  5. Now again knead the dough and make small balls out of it.
  6. Roll out the balls to small circle.
  7. Place the filling and cover it with another circle of rolled dough.
  8. Seal the edges with pinch and twist method.
  9. Once these are done fry them in medium hot oil till golden in colour.
  10. Now make sugar syrup of one string consistency and drop the surya kalas in them and immediately remove.
  11. Serve them when they are still warm and store them in airtight container.

I love these!!! My bua ji use to get Chandrkala for me when I was kid and I simply loved these... Is there sugar syrup inside?
