Homemade brinjal

Ingredients Serving: 4

  1. Small brinjal 12 pcs
  2. peanut dry roasted powder 2 table spoon
  3. coconut powder 3 table spoon
  4. ginger garlic paste 2 table spoon
  5. onion 1 finely chopped
  6. salt as per taste
  7. coriander leaves
  8. 3 table spoon oil


  1. Mix peanut powder , coconut powder, ginger garlic paste, salt chilli powder, coriander leaves in a bowl
  2. Wash and cut brinjal into 4 cuts without cutting the head. Just make long cuts through and through without damaging the crown of the brinjal
  3. Fill the mixture in the brinjal Keep it aside
  4. Heat 3 table spoon oil in a pressure cooker
  5. When the oil is medium hot put the brinjal one by one spread them next to each other not on top of each other
  6. Add 1/2 cup water and set the whistle . Let it cook on low gas for 2 full whistle.
  7. Remove the cooked brinjals gently. Garnish with coriander leaves
