  1. "Rasmalai ..." Recipe:- Make Chenna using milk and 1 tablespoon vinegar. Tie the chenna in a clean muslin cloth, squeeze it gently to remove excess water and hang it over tap for around 30-45 minutes to drain the excess water. Then take the Chenna in a plate and crumble the chhena with hand. Mash and knead crumbled chhena with hand until it comes together and turns into dough. Make a small balls out of the dough, press it gently between your palms to flatten it and turn into round pattie. Take 4 cups water and 1½ cups sugar in a deep pan, when it starts boiling gently add all the patties. Cover pan and boil for 5minutes each side over medium flame. Let it cool to room temperature for 1-2 hours. For making Rabri take milk in a pan heat it over medium flame. When it starts boiling, reduce flame to low and add saffron strands. Keep stiring and reduce the milk to 1/3rd of its volume.
