ABOUT Undhyu RECIPE

The dish marks it beginning from Diwali. The dish is a seasonal one, comprising the vegetables that are available on the South Gujarat coastline during the winter season. Undhyu is made in different styles in different parts of Gujarat. With wide variety of vegetables available and different spices this dish is sure to relish during the winters.

Ingredients Serving: 10

  1. 250g potatoes peeled and cut into four
  2. 250g brinjal cut into half
  3. 500g flat beans
  4. 500g pigeon pea
  5. 3 to 4 tomatoes chopped
  6. 150g fenugreek finely chopped
  7. 150g coarse gram flour
  8. Pinch of Soda
  9. 500 ml oil
  10. 150g Sugar
  11. 3 tsp garlic paste
  12. 1/2tsp asafoetida
  13. 3 tsp chili powder
  14. 1.5 tsp turmeric
  15. 4 tsp coriander powder
  16. salt as per taste
  17. Coriander to Garnish

Instructions

  2. For Dumplings
  3. Wash the finely chopped fenugreek leaves and remove in a strainer.
  4. In a bowl take the flour pinch of soda ,2tsp oil ,salt , 2 tsp sugar.
  5. Mix well. To this add the fenugreek leaves and bind it well together with water if required. The dumpling mixture shouldn't be too loose or too tight a medium texture it should be. Make small balls and fry in oil once light brown remove and
  6. Wash and peel potatoes and cut into four.
  7. Wash and cut the brinjal in two halves . If the brinjal is bigger in size can cut in four.
  8. Slit and half the flat beans. Soak pigeon peas and flat peas in water and strain.
  9. In a pressure cooker heat oil approx 150ml to this add asafoetida and 1/2tspturmeric and immediately add potatoes ,brinjal,flat beans,pigeon peas.
  10. Add salt as per taste. Cover the lid and at low flame let it cook for 2 to 3 whistles.
  11. For the Gravy
  12. In big pan heat approx 100ml oil to this add tomatoes and garlic paste. saute it and cook for 3 min
  13. To this add garlic paste,chilli powder ,sugar, coriander powder ,1tsp turmeric powder. Mix well. Let it simmer.
  14. To this add 1 cup water. Cook for a min.
  15. To this add the dumplings and pressure cooked vegetables.
  16. Slowly mix taking care that the vegetables don't break.
  17. Cover and let it cook for 2 min. Turn of the gas. Remove in bowl and garnish with coriander
  18. Serve hot with a chilled glass of buttermilk.
