ABOUT Seven Cup Cake RECIPE

This one is sweet dish. I want to end my recipe list of twenty with a sweet note. And Diwali celebration cannot be without a sweet. Though this is a common easy sweet which has the measure in the title itself, I chose to make it after viewing a recent show by Mrs.Revathy Shanmugam in a TV show . It has a slight variation from the usual one.

Ingredients Serving: 10

  1. Milk 1 cup
  2. Chic Pea/Besan 1 cup
  3. Grated coconut 1 cup
  4. Ghee/clarified 1 cup
  5. Sugar 2 1/2 cup
  6. Cashew nuts/Kaju 1/2 cup
  7. Cardamom/Elachi powder 1/2 tsp

Instructions

  1. Roast besan in little ghee in a non stick pan or a thick bottomed pan. Roast on medium flame till you get good aroma at the same time the color of besan should not change color.
  2. Now add milk and mix using whisk so that no lumps are formed.
  3. Add sugar and keep stirring with whisk .
  4. When sugar melts add coconut and cashew powder.
  5. Now when sugar liquifies add ghee and elachi powder.
  6. Keep stirring on medium flame. It takes 20 to 25 minutes to solidify.
  7. When it starts leaving sides and appears foamy but still has a loose consistency remove and pour in a greased plate.
  8. spread it evenly to have equal thickness and sprinkle ghee on the surface.
  9. When the heat is half reduced cut using spatula or pizza cutter. Remove pieces later.
