ABOUT MULTIGRAIN FLOUR MIXTURE RECIPE

Mixture is a famous snack of South India. It is easy to prepare mixture at home. Nothing can beat the taste of home made mixture. I have already published detailed post on How to make our traditional mixture, this time I have prepared mixture in a healthier version with multi grain flour . Try out this Multigrain flour Mixture for this diwali.

Ingredients Serving: 10

  1. Besan - 1 cup
  2. Home made multigrain flour - 2 cups
  3. Raw rice flour - ¼ cup
  4. Roasted bengal gram powder - 2 tsps
  5. Hot ghee - 1 tsp
  6. Salt - to taste.
  7. Raw groundnuts -250 grams
  8. Fresh curry leaves - 2 bunches (washed and dried )
  9. Asafetida - ½ tsp
  10. Chilli powder - 2 tsps
  11. Sugar - ½ tsp
  12. Salt - to taste
  13. Oil - for deep frying

Instructions

  1. STEP ONE
  2. Mix the besan , rice flour multigrain flour and roasted bengal gram flour divide in to three parts .First part is to make the sev for mixture .
  3. Mix hot ghee with salt and water to make a thick dough . put the dough into a thin sev press & press into hot oil directly .
  4. Fry until golden brown .Keep the flame at medium heat while frying .
  5. Drain and set aside .
  6. STEP TWO
  7. Mix the balance two third portion of besan with water and salt to make boondi . This mixture should be of loose consistency (like dosa batter .), .
  8. Hold a boondi ladle over the hot oil and pour the small quantity of batter into the ladle, tapthe ladle very gently .Do not tap it too much ,as boondis will loose its shape .(if the boondi’s shape is flat , then the batter is too watery .
  9. Fry the boondi till golden brown on medium heat .Drain it .
  10. Mix the sev and boondis together .
  11. STEP THREE
  12. Using a large slotted spoon, fry the groundnuts,roasted gram and curry leaves on medium heat .
  13. The roasted gram should be fried for a minute .( it should not change its colour .)
  14. Mix all the fried items together .Add sugar , chilli powder , asafetida while everything is hot.
  15. Break the sev and curry leaves into smaller pieces .check for salt and mix well .
  16. Multigrain flour Mixture is ready to serve .
