ABOUT Twisted Mathri Namkeen - Diwali Special RECIPE

A new makeover to our regular mathris makes this dish not only look tempting, but also tastes yumm, keeping our long age traditiin intact.

Ingredients Serving: 6

  1. All Purpose Flour/Maida - 1 cup
  2. Corn flour - 1 tspn
  3. Salt to taste
  4. Ajwain/carrom seeds - 1/2 tspn
  5. Roasted and crushed Jeera/Cumin - 1/2 tspn
  6. Oil - 1 tbspn for moyan
  7. Black pepper - 15-20 pc crushed
  8. Lemon juice of half lime
  9. Meetha soda - pinch (optional)
  10. Oil for frying

Instructions

  1. In a mixing bowl, take all purpose flour, add corn flour, meetha soda and mix well. Next add oil for moyan and rub the flour and oil properly like bread crumbs. Add salt, ajwain, black pepper and jeera. Optionally add 1 tbspn lime juice an
  2. Make a soft but firm dough by adding little water and rest for 10-15 mins by covering with a damp cloth.
  3. Take a small ball from this dough and roll (phulka size) with a rolling pin. Cut into 1 inch ( or less) wide slits, keeping sides intact.
  4. Take a strip from one and start rolling till the centre. Then repeat the process from other side. See the images for this step.
  5. Then press and join the ends sealing it with a twist.
  6. Make such more and keep aside for 15-20 mins.
  7. Heat oil in a wok/kadahi till it becomes hot. Lower flame and deep fry the twisted mathris till golden color. Drain the extra oil by removing from oil using slotted spatula.
  8. Cool them and store in irtight container. Enjoy with tea/Coffee.
