Kaipola or banana cake is a popular iftaar dish in North Kerala

Ingredients Serving: 6

  1. Ripe Banana: 3
  2. Egg: 4
  3. Sugar: 3 Table Spoon
  4. Cardamom Powder: 1/2 Tea Spoon
  5. Ghee: 2 Tea Spoon
  6. Cashew nuts/Raisins: For Garnish

Instructions

  1. Peel the skin of the banana and chop it to small pieces
  2. In a bowl add egg, sugar and cardamom powder. Beat using a fork or egg beater till the sugar is completely dissolved.
  3. In a pan pour ghee and fry the cashew nuts and raisins and keep aside. Add the chopped bananas and fry until slightly brown in colour.
  4. Add the fried banana to the egg mixture and combine well. In the same pan pour little ghee and pour the mixture to the pan. Sprinkle the fried cashew nuts and raisins on top.
  5. Cover and cook on very low flame for about 15 to 20 minutes. To check if its completely cooked or not insert a tooth pick in the center. If it comes out clean its ready.
  6. Switch off the flame and let it cool. Once cooled take it out of the pan, cut and serve.

hey even I tried it yesterday without egg, as our shravan month is still on, and it turned out good
