Pumpkin Halwa

Ingredients to make Pumpkin Halwa

  • pumpkin 300 grams peeled and grated
  • jaggery 1 cup grated
  • Milk 1 cup
  • ghee 1/2 cup
  • cardamom Powder 1/4 tsp
  • raisins 2 tsp
  • cashewnuts 3 tsp broken

How to make Pumpkin Halwa

  1. Heat 2 tsp ghee in a pan.
  2. Add the cashewnuts first and fry till golden. Remove. Then add the raisins and fry till puffed. Remove and keep them aside.
  3. In the same pan add the grated pumpkin and saute for about 5 mins.
  4. Add the milk and cook on low-medium heat for about 10 mins. Add the ghee little by little in between.
  5. When the pumpkin is cooked completely add the grated Jaggery, remaining ghee, half of cashewnuts and raisin and cardamom powder.
  6. Fry till the ghee starts to leave the sides of the pan.
  7. Remove in a serving plate, garnish with the remaining cashewnuts and raisins and serve.
