Ingredients Serving: 8

  1. Besan/Chickpea flour - 1 cup
  2. Rice flour - 1/4 cup
  3. salt to taste
  4. Red chilli powder - 1/2 tspn
  5. Garam masala - pinch
  6. Ajwain/carrom seeds - roasted crushed 1/2 tspn
  7. Roasted and crushed Jeera/Cumin - 1/2 tspn
  8. Hot oil - 1 tbspn for moyan
  9. Black pepper - 15-20 pc crushed powder
  10. lavang - 10 pc grinded (as per taste)
  11. oil for frying


  1. In a mixing bowl, take besan/chickpea flour, add rice flour and mix well. Next add hot oil for moyan and rub the flour and oil properly like bread crumbs. Add salt, red chilli powder, garam masala powder, ajwain, black pepper, lavang powde
  2. Heat oil in a wok/kadahi till it becomes hot. Place the sev bhujiya making jhaarra/stand on it.
  3. Lower flame. Take a small ball from this dough and start pressing it with the lower portion of your palm. The sev bhujiya starts falling from back in the oil. Do it fast and remove the stands once done.
  4. Alternatively you can use bhujiya making machine. Take a ball of diugh, roll into cylindrical and stuff in the machine. Press it to make bhujiya directly into the oil.
  5. Deep fry the bhujiya. Flip it when one side is done. Fry till light golden color from both sides after flipping it.
  6. Drain the extra oil by removing from oil using slotted spatula.
  7. Cool them and store in airtight container.
