Lobongo Lotika

Ingredients to make Lobongo Lotika

  • all purpose flour (Maida) - 1 &1/2 cup
  • ghee - 1&1/2 tablespoon
  • Food Colour (orange) - 1/4 teaspoon
  • Khoya/mawa - 3/4 cup
  • sugar - 2 &1/3 cup
  • water - 2 cup
  • Vanilla essence - 1/2 teaspoon
  • Refined oil - 500 ml
  • cloves - 15 to 20

How to make Lobongo Lotika

  1. Mix 2 cup sugar and 2 cup water together and boil.
  2. When the syrup becomes sticky and two-string consistency, switch off the gas and allow it to cool.
  3. Now take a bowl and mix mawa/Khoya, sugar and vanilla essence all together.
  4. Mash them and mix well and keep the mixture aside.
  5. Now make a dough using all purpose flour, food colour, ghee and water as required.
  6. Make small size ball from the dough and make a round shape from each ball using a rolling pin.
  7. Keep a spoonful of stuffing inside and fold it like half circle. Seal the edges properly.
  8. Now give another fold to the half circle and it will become an elongated shape.
  9. Turn the folded shape and give a overlapped fold just like closing an envelope.
  10. Now put a clove just like a pin to seal the overlapped edges to join
  11. Similarly prepare the remaining numbers.
  12. Heat oil (or desi ghee) and deep fry them and dip into sugar syrup for 15 minutes.
  13. After that take out from sugar syrup and serve them.

My Tip:

You can add saffron strands in the syrup to get yellowish color.
