Rava Kesari - South Indian Sweet dessert made with rava, ghee, dry fruits and saffron.

Ingredients Serving: 4

  1. Rava/Sooji 1 cup
  2. Sugar 1/2 to 1 cup as per your sweet preference
  3. Water 2 cups boiling water
  4. ghee 1/2 cup
  5. Cashewnuts, Raisins and almond 1/4 cup
  6. Few saffron strands
  7. Cardamom Powder 1/4 tsp

Instructions

  1. In a small bowl add some hot water and add the saffron strands. Keep aside.
  2. Heat 3 tsp of ghee in a pan. Fry cashewnuts and Almond till golden. Then add raisins and fry for few seconds. Remove it and Set aside.
  3. In the same pan add sooji and roast for about 5 mins or so till it is light golden and raw smell goes away from it.
  4. In the low flame pour the boiling water, cardamom powder and the saffron water over the sooji and immediately mix well nicely so no lumps is form. Keep mixing till it begins to thickens which will take around 5 mins.
  5. Add the sugar and mix well stirring it continously till the mixture thickens.
  6. Add the ghee and mix well till the kesari leaves the sides of the pan. Add in the roasted nuts and mix well.
  7. Serve warm or hot as it is in a bowl. I have used muffins cup to give it a shape.
