ABOUT Jalebi RECIPE

The colourful hot magic swirls of jalebi dunked in cool rabdi is a sinful treat for ur tummy during diwali.

Ingredients Serving: 4

  1. All purpose flour 2 1/2 cups
  2. Baking Soda 1 Tsp
  3. Orange food colour 1/2 tsp
  4. Salt a pinch
  5. Sugar 2 cups
  6. Lemon juice 3 tsp
  7. Cardamom powder 1/2 tsp
  8. Water 3 Cups
  9. Oil/ ghee to fry

Instructions

  1. Take two and quarter cup of all purpose flour ,salt, baking soda in a large bowl. To it add two cups of water and whisk continuously for 15 mins.
  2. Until you form a smooth lump free batter. The batter should be thick in sauce consistency. Allow it to ferment for a day.
  3. Next day, whisk the batter again adding the remaining quarter cup of all purpose flour for ten minutes. Meanwhile prepare sugar syrup of one string consistency. To the sugar syrup add cardamom powder, orang food colour and lemon juice. Lemon juice prevent crystallisation.
  4. Heat oil or ghee in a wok , pour the batter in sauce bottle and make jalebi starting from outer circle. Cook on either side for three to four minutes in medium flame until they turn crisp.
  5. Dunk the jalebi in warm sugar syrup for 5 mins. Serve hot.
