Raw Papaya Halwa

Ingredients to make Raw Papaya Halwa

  • Grated raw papaya - 2 cups
  • mawa- 1cup
  • sugar - 1cup
  • ghee - 1/2cup
  • water - 1 cup
  • cardamom powder-2pinch
  • Rose water-1tbsp
  • Soaked and silvered almonds - a handful
  • A drop of green color (optional)

How to make Raw Papaya Halwa

  1. First grate the papaya and blanch it in boiling water for 2minutes.Put on the strainer and leave aside to cool completely.
  2. Heat ghee in a non stick pan. Add the cooled Papaya and fry till a nice aroma comes out. (approximately 5 minutes)
  3. On the side, make a sugar syrup of sugar and water. Add one drop of green color (optional).
  4. when Papaya gets sauted well, then add grated mawa and again sautee for another 5 minutes.
  5. Then add the sugar syrup and mix everything well and keep stirring continuously till all the water dries up and the ghee leaves the sides.
  6. Add the Cardamom powder and mix again. Add rose water too. The combination of Cardamom and rose water enhances the taste.
  7. Transfer to a serving dish and decorate with silvered Almonds.
  8. Serve warm and enjoy

My Tip:

It's very important to blanch the papaya and more important is to cool it completely otherwise it will stick to the pan. Secondly if you don't want to put green Colour then dissolve kesar in the warm water and add to the sugar syrup. It will give a nice orange color to the Halwa. Thirdly always add Cardamom in the end to enjoy the Flavour.
