Ingredients Serving: 2

  1. Chicken thighs 2 nos
  2. Basmati rice 2 cups
  3. Curd 1/2 cup
  4. Water
  5. Whole garam masala
  6. Bay leaves
  7. Ginger garlic paste 2 table spoon
  8. Chopped onion - 1 cup
  9. Salt
  10. Turmeric
  11. Chilli powder
  12. Biryani masala
  13. Fried onions
  14. Mint leaves
  15. oil
  16. ghee
  17. Saffron - a pinch
  18. Warm milk - 1 table spoon
  19. Biryani essence
  20. Rose essence

Instructions

  1. Marinate chicken with curd, salt, turmeric, chilli powder, biryani masala, ginger garlic paste and a table spoon of Oil. Keep for 2 hours.
  2. Soak rice for 45 mins and then wash and cook with salt, a teaspoon of Oil and whole garam masala. Cook till firm and drain water and keep rice uncovered.
  3. Heat 2 table spoon of Oil and add the chopped onion and saute for a while. Add the marinated chicken with spices and cook covered in a slow flame.
  4. When chicken is almost cooked add another teaspoon of biryani masala and few mint leaves and cook for another 5 mins.
  5. Soak the saffron in warm milk for 1/2 hour.
  6. For layering :
  7. Take a heavy bottomed pan. Make a layer of cooked rice. Put the chicken on top of it and again make a layer of rice on top. Now add fried onions and mint leaves on top. Add rose essence and biryani essence and the saffron milk. Spread a table spoon of ghee. Now cover the pan and seal properly so that steam cannot escape.
  8. Put the pan on slow flame for 30 mins. Mix the rice very lightly every 10 mins.
  9. After switching off flame, allow the biryani to rest for another 30 mins covered and then your aromatic chicken biryani is ready to serve.
