ABOUT GUJIAS WITH DIFFERENT SHAPES RECIPE

A delicious traditional sweet , crispy from outside and soft from inside

Ingredients Serving: 8

  1. For the outer covering
  2. 2 cups maida or plain flour
  3. 2 - 2 1/2 tbsp of ghee for moyan
  4. Pinch of salt
  5. Water as required to knead the dough
  6. For the stuffing
  7. 1 Cup Mawa
  8. 1/4 cup desiccated coconut
  9. Few strands of Saffron
  10. 1/4 cup powdered sugar
  11. 1/4 cup chopped mixed dry fruits like pista , badam , kishmish , chironji
  12. For frying
  13. Take ghee for frying
  14. For sugar syrup
  15. 2 cups of sugar
  16. 1 cup of water

Instructions

  1. FOR THE OUT COVERING DOUGH
  2. Take a mixing bowl and put together maida , salt and ghee
  3. Mix nicely with your fingertips , until becomes crumbly
  4. Then by adding water little by little , knead a medium tight dough
  5. Cover and keep it for half an hour to rest
  6. FOR THE STUFFING
  7. In a mixing bowl add all the stuffing ingredients and mix well
  8. FOR MAKING GUJIA
  9. Once again knead the dough nicely and make small balls from the dough
  10. In the meantime in a heavy bottomed pan or kadai heat ghee for deep frying , first on high then make it low
  11. Roll out the balls with a rolling pin , into small and medium thin rotis
  12. Now put the stuffing in the center of the roti , nearly 1 1/2 tbsp -2 tbsp of stuffing will be enough
  13. Now with your fingertip apply some water on all sides of the roti
  14. Now fold the roti from one side and take it to the other side , giving a semi circle shape to form gujia
  15. Seal the sides very nicely
  16. Now make design by pinching the folded side , with your thumb and index finger
  17. If you find it difficult to make the design then just press the sides with a fork , it should be sealed properly
  18. In this way make all the gujias
  19. Make them in different shapes like semi circle one , round one and like a potli
  20. Now slowly slide the gujia in the hot ghee , one by one
  21. Fry them on low heat , by turning them at regular intervals , so that they becomes light brown and crispy from all the sides
  22. Fry only 4-5 gujias at one time
  23. Along with this cook sugar and water to make 1 1/2 string consistency sugar syrup , side by side
  24. When the gujias cools down completely then only dip them in sugar syrup , and syrup should be little warm
  25. Dip only few gujias in syrup , as required at one time , the rest keep them as it is in an airtight container
  26. Take out the syrup coated gujias in a serving plate and garnish with finely chopped pistachios
  27. 16 pieces of medium sized gujias were made from this quantity
