ABOUT Tigelle Italian flat bread RECIPE

This is an Italian unusual bread made by peasants and had an important place in Italian history. Many of the bakers are not aware of this bread.It is between a pancake and an English muffin with crispy outside and soft inside can be sandwiched with anykind of stuffing. It can be baked or can be prepared in griddle too.

Ingredients Serving: 15

Flour- 31/2 cups
water - 1 cup
Yeast- 2 teaspoons
butter/shortening- 21/2 tablespoons
salt - 1 & 1/2 teaspoons
sugar - 1 teaspoon
butter to grease

Instructions

Heat water in lukewarm, add a pinch of sugar and salt from the measurement then sprinkle yeast and leave aside undisturbed till it froths.
In a stand mixer using hook attachment add flour and butter mix till it appears as a bread crumb mixture
Add in yeast mixture, remaining salt and sugar mix well. Knead well for 10-15 minutes till it becomes non-sticky and pliable dough.
Cover the dough with cling wrap and keep aside for 1-1/2 hrs. When the dough raises double in size. Take a small ball sized dough, roll thick and flat.
Heat the griddle/grill pan coat some butter and flip the tigelle on both sides.
