Ingredients Serving: 2

  1. Basmati rice - 1 cup
  2. Button Mushroom - 100 gm
  3. Corn - 1 cup
  4. Spring Onions - handful
  5. Capsicum - 1
  6. Salt and pepper to taste
  7. Soya Sauce - 1 tbsp
  8. Vinegar - 1 tbsp

Instructions

  1. Wash the rice and soak for 30 minutes.
  2. Cook the rice in a pressure cooker, adding 2 cups water and 3 tbsp Oil and allow a generous 10 minutes if cooking in sim mode.
  3. Allow the rice to get cooled.
  4. In a pan, add 4 tbsp Oil, and season the sliced mushrooms, spring onions, capsicum and garlic.
  5. Add in salt and pepper. Add in soya sauce and vinegar.
  6. Mix the cooked rice into the veg mixture. Give a nice stir. And add the cooked corns on top.
  7. The rice is ready.
