ABOUT Easy fruit cake RECIPE

A Christmas cake adapted from Joy of baking, with lots of raisins dried peels and no alcohol.

Ingredients Serving: 8

210 gms brown sugar
240 gms water
55 gms butter
2 tsp cinnamon powder
300 gms mix of raisins-dried cranberries-tutti fruity etc
2 eggs beaten
195 gms all purpose flour
1 tsp baking soda
2 tsp vanilla essence
150 gms chopped nuts walnuts & almonds and candied peels

Instructions

In a stove top compatible bowl, add sugar, water, butter, cinnamon powder and raisins. Cook over medium flame for 5 minutes after the mixture comes to a boil.
Remove from heat, let it cool.
Pre-heat the oven at 180 degrees Celsius.
Once cool, add the rest of the ingredients and mix till all of them are well incorporated. Pour in a prepared loaf tin. Bake for 50-55 minutes or till done.
