A Gujrathi savoury steamed cake made of gram flour. It's an instant snack or breakfast.

Ingredients Serving: 4

  1. 1 and 1\2 cup gram flour or besan
  2. 2 tbsp semolina (suji)
  3. 2 tsp sugar
  4. 1 tbsp oil
  5. 1 tsp green chilli paste
  6. 1 tsp salt
  7. 1 tsp ginger
  8. 1\4 tsp haldi/ turmeric powder
  9. 1 and 1\4 tsp eno fruit salt
  10. 1\4 tsp cooking soda
  11. 2 tsp lemon juice
  12. 1 and 1\4 cup water
  13. For tempering:
  14. 1 tbsp oil
  15. 1 tsp mustard seeds
  16. 2-3 green chillies, slit
  17. 1 tbsp lemon juice
  18. 3\4 cup water
  19. 3 tsp sugar
  20. Chopped Coriander to garnish


  1. Sift the besan/ gram flour.
  2. Mix the besan(gram flour), suji, salt, sugar, haldi/turmeric, ginger-green chilli paste, oil and make a smooth batter of thin pouring consistency.
  3. Add soda and eno fruit salt. Mix it well. Do not over beat this. Immediately transfer the batter to a steamer/ steaming pan cover with a lid and cook it for 20 mins.
  4. If cooking in a pressure cooker, do not put any weight/whistle. You are only steaming it. Steam until the fork comes out clean.
  5. To temper, heat oil in a pan, add in the mustard seeds, slit green chillies, sugar and lemon juice and also add water. Let it come to a boil. Turn off the flame and add this to the dhokla.
  6. Let the dhokla rest for 10-20 mins until it absorbs all the water and becomes soft and fluffy.
  7. Serve it hot with a garnish of chopped coriander on top.
