ABOUT Couscous Vegetable Salad RECIPE

Couscous (pronounced Koose-Koose) is made from steamed small balls of semolina. It is a very famous Mediterranean food that is well known all over the world. Here I am presenting couscous vegetable salad which is very healthy. A no cooking required recipe that everyone will love. It is packed with protein and fiber, a colorful and healthy salad that can be prepared in 2 minutes.

Ingredients Serving: 2

  1. 1 cup couscous
  2. 1 and 1/2 cup boiled water
  3. 1 cucumber, peeled and chopped into small cubes
  4. 1 tomato finely chopped
  5. 1/4 cup spring onion finely chopped
  6. 1 green chilli finely chopped
  7. 1/4 cup cilantro finely chopped
  8. 1/2 tbsp salt or as per taste
  9. 1 tbsp lemon juice or as per taste
  10. 1/2 tsp black pepper or as per taste
  11. A pinch of red chilli powder
  12. 1/2 tbsp extra virgin olive oil (optional)

Instructions

  1. In a bowl, add in the couscous and boiling water. Mix it well, cover and keep it aside for 10-15 minutes. (You can boil the water in a microwave, it will only take 2 minutes.) Then allow it to cool for 5 minutes.
  2. In the mean time, you can prepare all the vegetables.
  3. Now take the couscous bowl. Pour in the oil and mix well. Then add in all the vegetables, salt, black pepper, red chilli powder and lemon juice. Mix it well together.
  4. Your 2 minute salad is ready! (If you want to eat a cold salad, then keep it in the fridge for 30-45 minutes)
