ABOUT Manchurian Noodles RECIPE

It's a homemade Chinese style flavoured noodles.

Ingredients Serving: 4

  1. Hakka Noodles 4 cubes
  2. Finely chopped onion 1
  3. Finely chopped ginger and garlic 1 tsp each
  4. Carrot finely chopped or julienned 1
  5. Finely shredded regular cabbage and purple coloured cabbage 1/2 cup
  6. Green capsicum finely chopped or into thin strips 1 small sized
  7. Finely chopped beans 1/4 cup
  8. Finely chopped spring onions 1/4 cup
  9. Eggs 2 to 3 (optional)
  10. Vinegar 1 tsp
  11. Soya sauce 2 tsp or as required
  12. Chilli sauce 2 tsp or as required
  13. Tomato sauce 3 tsp or as required
  14. Green chilli sauce 2 tsp or as required
  15. Ajinomoto (optional) a few pinches
  16. Salt and pepper to taste
  17. Sugar 1 tsp
  18. Oil to saute

Instructions

  1. Boil the noodles with some oil. Then drain the water and keep it aside. (Sprinkle some oil to avoid it sticking.)
  2. In a pan or wok, add oil to heat, then add in the finely chopped ginger and garlic. Saute this on a high flame. Next, add in the onion and mix it well.
  3. Once the onion becomes translucent in colour, add in all the veggies one by one starting with the carrots and beans.
  4. Stir fry them until they are tender, then add in the capsicum and both the coloured cabbages. Mix them well together.
  5. Add salt and pepper to taste and mix them well together. Saute on cook on a high flame.
  6. Add all the sauces, one by one, starting with the green chilli, chilli sauce, soya sauce and tomato sauce. Mix them well until they are nicely coated with the veggies.
  7. In a separate pan, add little oil to heat, then add the beaten eggs. Next, add salt and scramble the eggs, add this to the veggies. (Add some more oil if required.)
  8. Now add in the boiled noodles little by little and mix it with the veggies and eggs.
  9. Adjust the seasoning as per taste. Then add ajinomoto (optional), sugar and mix it well.
  10. Then add in the spring onions greens and toss it on a high flame.
  11. Serve it hot!
