Ingredients Serving: 4

  1. For the wonton wrappers:
  2. All Purpose Flour- 1 and 1/2 cups
  3. Egg- 1
  4. Water- 1/2 cup
  5. Salt- 1 tsp
  6. For the filling:
  7. Chicken (cooked and minced)- 1 cup
  8. Egg- 1
  9. Carrot (grated)- 1
  10. Ginger (grated)- 1 inch piece
  11. Spring onion (chopped)- 2 tbsp
  12. Orange juice- 1 tsp
  13. Salt- 1 tsp
  14. Pepper powder- 1 tsp
  15. For the Spicy Red Chilli Sauce:
  16. Homemade Red chilli oil- 2 tbsp
  17. Dark soy sauce- 2 tbsp
  18. Light soy sauce- 1 tbsp
  19. Salt- 1/4 tsp
  20. Sugar- 1 tsp
  21. Vinegar- 1 tbsp
  22. Sesame seeds (roasted lightly)- 1 tbsp
  23. Spring onions (chopped)- 2 tbsp
  24. Coriander leaves (chopped)- 1 tbsp
  25. To cook the wontons:
  26. Water- 2 cups
  27. Salt - 1 tsp
  28. Vegetable oil- 1 tbsp
  29. Lettuce Leaves- 2
  30. To make the home-made chilli oil:
  31. Vegetable oil (odourless)- 1 cup
  32. Garlic clove- 1
  33. Red chilli flakes- 1 tsp
  34. Red chilli powder- 1 and 1/2 tbsp
  35. Sesame oil- 1 tsp

Instructions

  1. To prepare the chilli oil at home, heat the vegetable oil in a pan. Add in the crushed garlic and saute over a low heat.
  2. Next add in the chilli flakes and chilli powder. Saute for 2-3 minutes on a low flame. Turn the flame off.
  3. Then add in the sesame oil and mix it. Allow it to cool completely. Store it in a glass jar.
  4. To prepare the wonton wrapper dough, take the flour and salt in a bowl. Add an egg and mix it nicely with clean fingers. Add water little by little to form a soft dough. Allow the dough to rest for half an hour.
  5. In the meantime, prepare the filling. Take the minced chicken, egg, spring onions, grated carrot and ginger in a bowl. To this, add salt, pepper and orange juice. Mix it well and keep aside.
  6. Take the dough and knead it once more. Divide the dough into two parts. Dust the work surface with flour and roll out one half of the dough to a thin sheet. Cut out small squares of about 2 and half inch sized sides. Repeat the process for the second half of the dough too.
  7. Now our wonton wrappers are ready to be filled. Take a square wrapper and place 1 tsp of the filling at the centre. Apply water with your index finger along the edges of the square. Now fold the wrapper halfway and seal the edges to form a rectangle.
  8. Next, bring together the folded corners to overlap slightly, so that they appear like folded arms and seal it properly.
  9. Place it on a parchment paper. Similarly prepare all the wontons.
  10. Once all the wontons are prepared in this way, cook them in boiling water. For this, boil 2 cups of water along with 1 tsp salt and 1 tbsp vegetable oil.
  11. Once the water starts boiling, carefully drop the wontons one by one into the boiling water. Cook it for 3 minutes.
  12. Add 1-2 lettuce leaves and let it boil for another minute. Drain the wontons from the water with a slotted laddle and keep them in a bowl.
  13. To prepare the sauce, take the chilli oil, dark soya sauce, light soya sauce and vinegar in a bowl. Mix it well. Then add sugar, salt, spring onions, sesame seeds, and coriander leaves and mix again.
  14. Now add the prepared wontons along with the lettuce leaves to this spicy sauce. Add about 1/2 to 1 cup of boiling water, used for cooking the wontons to the sauce mixture.
