ABOUT Instant Carrot Pickle/ Relish RECIPE

This is a famous pickle or relish of the Maharashtrian household. It goes well with any dish or if you want to make an impression, serve it at parties.

Ingredients Serving: 4

  1. 2 big sized dark red carrots
  2. 1 tsp chilli powder
  3. 1/2 tsp haldi/ turmeric
  4. 1 tbsp split yellow mustard seeds
  5. 1/4 tsp lime juice
  6. 3-4 fenugreek seeds
  7. Jaggery a small piece
  8. For the tadka:
  9. 1 tbsp mustard oil
  10. Asafoetida, a generous pinch
  11. 3-4 fenugreek seeds

Instructions

  1. Cut the carrots lengthwise (as shown in the picture), then add in the spices (1 tsp chilli powder, 1/2 tsp haldi/ turmeric, 1 tbsp split yellow mustard seeds, salt and mix well).
  2. Add 1/4 tsp lime juice, jaggery and mix it well (if needed for sweetness).
  3. To prepare the tadka, heat 1 tbsp mustard oil, asafoetida a generous pinch and 3-4 fenugreek seeds. Then mix the tadka with the carrot mixture.
  4. Serve it instantly or store and use as required.
