Marble Tea Eggs

Ingredients to make Marble Tea Eggs

  • 2 white eggs
  • 1 star anise
  • 1- inch cinnamon stick
  • 1 and 1/2 tsp tea leaves
  • 1/2 tsp white salt
  • 6-7 peppercorns, coarsely grinded in a mortar and pestle
  • 2 tsp soya sauce
  • 1 and 1/2 tsp white vinegar
  • water as required

How to make Marble Tea Eggs

  1. Wash the eggs in enough water.
  2. Take a saucepan, add the eggs and water. The water level should be at least 1 inch up from the eggs level.
  3. Put the saucepan on a high flame and bring it to boil. The moment the water starts boiling, lower the flame and let the eggs boil for 2 minutes. Then turn off the flame and take out the eggs.
  4. Tap on the eggs with the help of a tablespoon's handle 4-5 times at different sides. (You need not peel them off)
  5. Now, in the water in which we boiled the eggs, add all the mentioned ingredients along with eggs. Put it back on the heat and lower the flame. Cover the saucepan and leave it for 1 hour to 30 minutes and simmer. The tea water will reduce slowly.
  6. After this time, turn off the flame. Take out the eggs, wash them in cold water and peel them.
  7. You can serve it with the leftover sauce in a pan. (Make sure to strain before you serve.) Or eat the eggs just as they are, you will love the flavours infused in them.

My Tip:

Adding vinegar is an important step. It breaks the egg membrane and lets the colour and flavours infuse together.
