An instant method to prepare a mouthwatering and luscious mango pickle. It is famously known as ‘Keethu Manga Urugai’ down South, this pickle is made and relished frequently when green mangoes are in season.

Ingredients Serving: 8

  1. Green Mangoes- 2 medium sized, raw and firm
  2. Salt- 1/4 cup
  3. Turmeric Powder/Haldi - 1/4 tsp
  4. Red Chilli Powder- 2 tbsp
  5. Fenugreek/Methi Seeds - 3/4 tsp, roasted and powdered
  6. For seasoning:
  7. Sesame/Til Oil - 1/4 cup
  8. Asafoetida/ Hing- 1/2 tsp
  9. Mustard Seeds/Rai - 1 tsp

Instructions

  1. Wash and pat dry the green mangoes. Cut them into thin pieces along with the skin.
  2. Place the mangoes pieces in a bowl, then add in the salt, haldi, chilli powder and methi seeds powder.
  3. In a small kadai, heat oil and add in the rai/ mustard seeds. When it splutters, add in the hing.
  4. Once the hing emits a nice flavour, turn off the flame. Pour this tadka over the mangoes and mix it well.
  5. Your yummy mango pickle is ready to be served!
