ABOUT Mint Coriander Soup RECIPE

A refreshing soup made with coconut milk and a dash of lemon.

Ingredients Serving: 4

  1. Fresh mint leaves: 1.5 cups
  2. Fresh coriander leaves: 1/2 cup
  3. Green chillies: 2
  4. Chopped ginger: 1 tsp
  5. Chopped garlic: 1 tsp
  6. Coconut milk: 1. 5 cups
  7. Lemon Juice: 1/4 cup
  8. Pepper powder: 1/4 tbsp
  9. Corn flour: 3 tbsp
  10. Water: 2 cups
  11. Oil: 2 tbsp
  12. Salt to taste

Instructions

  1. Wash both the mint and coriander leaves and chop them.
  2. Heat oil in a pressure cooker, once hot add in the ginger and garlic and saute it for a few seconds.
  3. Now add in the chopped mint and coriander leaves, chopped green chillies, salt and 2 cups of water. Pressure cook it till 1 whistle blows.
  4. Allow the content to cool a bit and blend it finely. (If required filter the mixture) Then bring this mixture to a boil.
  5. Mix the corn flour, coconut milk and pour it into the boiling mixture and mix it well.
  6. Turn off the stove once it starts boiling.
  7. Then add in the lemon juice and sprinkle some pepper powder on top and serve.
