ABOUT Orange Marmalade Cake RECIPE

A 'soft' tea time cake I learnt at a cooking class.

Ingredients Serving: 6

  1. 1 - cup curd
  2. 1 & 3/4 - cup flour
  3. 2 tbs - orange marmalade
  4. 2 tbs - brown sugar
  5. 1 tsp - baking soda
  6. 2/3 cup - sugar
  7. 3/4 - cup refined oil
  8. a pinch of orange/red colour
  9. 2-3 drops - orange emulsion or essence
  10. 6 tbs - orange juice (fresh or tetra pack)
  11. 1 tsp - lemon juice
  12. 1/2 tsp - lemon or orange rind
  13. For the Sauce:
  14. 175 gms - icing sugar
  15. orange juice - Left over

Instructions

  1. Beat all the wet ingredients (curd,marmalade,oil,orange colour,essence,juice,rind)
  2. Add the brown sugar and sugar, beat in a mixer for 2-3 minutes.
  3. Sieve together all the dry ingredients (flour and baking soda)
  4. Pour the liquid mix into the dry mix and mix with a wooden spatula, stirring in one direction.
  5. Add more juice if you feel you want the batter a little more runny.
  6. Bake in a pre-heated oven at 200°C for 20 minutes.
  7. For the sauce: mix together 175 gms icing sugar and orange juice. Add enough to make the icing thick and runny.
