ABOUT Burnt Garlic Fried Rice RECIPE

Fried rice is a popular Chinese dish that involves stir frying rice and vegetables cooked together on a high flame in a wok. There are numerous variations to this dish and one such kind is this dish that is predominantly flavoured by burnt garlic.

Ingredients Serving: 4

  1. Cooked Basmati Rice- 2 cups
  2. Capsicum (Red, Yellow and Green)- 1/2 cup
  3. Paneer, cubed - 1/4 cup
  4. Garlic- 10-15 cloves, finely chopped
  5. Red chillies - 5-6
  6. Sugar - 1 tbsp
  7. White pepper powder - 1 tsp
  8. Salt to taste
  9. Oil - 2 tbsp

Instructions

  1. Add the red chillies to boiling water and leave it for 5-7 minutes. Let it cool down and grind to a smooth paste with a little water.
  2. Heat the oil in a pan and add the ground chilli paste. Add about a teaspoon of sugar to it and cook for a couple of minutes, then keep it aside.
  3. Heat some oil in a wok and add in the minced garlic. (You want to fry the garlic until it becomes dark brown in colour. Not black, but brown, this gives it the burnt flavor.)
  4. To this, add in the bell peppers, chilli paste, salt, pepper powder and saute it on a high flame for a minute. Add the paneer and saute for another minute.
  5. Add in the precooked basmati rice and toss it well.
  6. Serve it hot with any side dish of your choice.
