ABOUT Dakgangjeong RECIPE

A Korean recipe for crispy, fried and juicy chicken.

Ingredients Serving: 4

  1. 1/2 kg boneless chicken
  2. Garlic paste 1 tbsp
  3. Potato starch or Rice flour 1 cup
  4. Black pepper 1 tsp, powdered
  5. White pepper 1 tsp, powdered
  6. Oil for frying 2 cups
  7. Peanuts 1/2 cup
  8. Salt 1 tsp
  9. For the sauce:
  10. Oil 1 tbsp
  11. 1/2 cup soy sauce
  12. Crushed garlic 1 tsp
  13. Red peppers 4
  14. Ginger grated 1 tsp
  15. Brown Sugar 1 tbsp
  16. White vinegar 1 tbsp
  17. Rice wine 1/2 cup
  18. Sesame seeds 1 tbsp

Instructions

  1. Marinate the chicken pieces with garlic paste, black pepper, white pepper, salt and refrigerate it for 2-3 hours.
  2. Coat it with starch and fry in the heated oil till the chicken comes out crispy. Drain extra oil on the rack and let it rest.
  3. Fry the peanuts into the remaining oil and drain.
  4. For the sauce:
  5. Heat 1 tbsp oil and saute the ginger, garlic and broken peppers. Add in the soy sauce, vinegar, rice wine and brown sugar. Cook for 5 more minutes and simmer the heat.
  6. Add in the chicken, peanuts and cook it a little for 2 minutes.
  7. Sprinkle sesame seeds and serve it hot with rice.
