ABOUT Gajar Ka Halwa RECIPE

Ingredients Serving: 8

  1. 1 kg carrots/gajar
  2. 1 liter or 6 cups full fat milk
  3. 1 kg Sugar
  4. 6 elaichi
  5. Khoya (optional)
  6. Handful of mixed nuts (pista, cashews, almonds)
  7. 5 tbsp ghee

Instructions

  1. Wash the carrots thoroughly under running water. Peel and grate them. (A food processor quickens the process of grating. If you own one you can use it.)
  2. On a low heat, dry roast the nuts until they are crunchy for garnishing. (A few pistachios, cashew and almonds would do great. You can also fry them in ghee. Dry roasting eases the chopping work.) Then cool and chop them.
  3. To the same pan add milk and begin to heat it. Then add in the grated carrots. Stir and cook on a medium flame. Keep stirring to prevent burning at the bottom.
  4. Cook until the milk completely evaporates. (You will have be cautious towards the end when the milk has almost evaporated.)
  5. Add sugar and stir. Once the sugar melts and the halwa turns gooey once again. Stir and cook. When the moisture is half evaporated. Add ghee and stir well.
  6. Stir and cook until the halwa thickens. Just before you finish off, add cardamom powder.
  7. Garnish with nuts. Serve it chilled or warm.
