Ingredients Serving: 3

  1. 2 onions
  2. 5 big red ripe tomatoes
  3. 1 or 2 green chillies
  4. 2 tsp chilli powder
  5. 1/4 tsp turmeric powder
  6. 1/2 tsp fenugreek seeds
  7. 1/2 tsp mustard seeds
  8. 1/2 tsp urad dal
  9. 1/2 tsp asafoetida powder
  10. 1 tbsp powdered jaggery
  11. Few curry leaves
  12. 5 tbsp oil
  13. Salt as per taste

Instructions

  1. Dice the onions. Then slice the tomatoes and chop the green chillies.
  2. Add in the diced onions in your mixer jar and pulse it for 3 to 5 times. Then remove the paste from the jar. Next add in the sliced tomatoes in the same jar and pulse it 2 more times, then grind it well. (No need to add any water.)
  3. Heat oil in a thick broad kadai and add in the fenugreek seeds. When it turns brown add the mustard seeds and urad dal.
  4. When they turn golden brown, add in the grounded onion paste and green chillies. Stir it continuously for 3 minutes. The onion paste will absorb the oil and get thick.
  5. Then add in the tomato paste, mix them evenly and add in the required salt, turmeric powder and chilli powder to it. Cook them in a medium flame for 7 to 10 minutes or till the tomatoes are softened, while stirring occasionally.
  6. When all the water evaporates and it gets slightly thick, add in the jaggery powder, asafoetida powder and curry leaves to it. Cook till the oil floats on the top of the thokku, then remove it from the flame.
