ABOUT Kayan Thi Pebya ( Eggplant & Tofu Mashed) RECIPE

A Burmese Vegetarian Delicacy. Similar to Baigan bharta but with a healthy twist of Tofu. This gives it a classic change of taste. Its just woww!! Must try!

Ingredients Serving: 3

  1. Eggplant 1 big
  2. Tofu 150 grams
  3. Onion 1 medium
  4. Garlic 1 tsp finely chopped
  5. Green chilli 1
  6. Turmeric 1/2 tsp
  7. Madras curry powder 1 tsp
  8. Soy sauce 2-3 tsp
  9. Spring onion leaves 1/2 cup
  10. Salt to taste
  11. Oil 2 tbsp

Instructions

  1. Peel the skin of the roasted egg plant and coarsely mash the pulp. Also mash the tofu well. Then mix both of these ingredients together.
  2. Finely chop the onions and garlic.
  3. Heat oil and stir fry the chopped onions and garlic till they turn brown. Add in the turmeric and curry powder, mix it well.
  4. Next add in the chopped green chillies and soya sauce.
  5. Now add the Eggplant-Tofu mash into the above onion mixture and stir well.
  6. Add in the chopped coriander and spring onion. Then add in the salt and mix it lightly.
  7. Garnish with slices of spring onion or greens as per choice.
