ABOUT Thai Cucumber Salad RECIPE

A quick, delicious and refreshing salad. It is best when served along with appetizers.

Ingredients Serving: 2

  1. Cucumber 1 large
  2. Salt to taste
  3. Red onion 1 small sliced
  4. Peanuts roasted 2 tsp chopped
  5. Cilantro or spring onion (I used chopped spring onion greens for garnishing.)
  6. Dressing Ingredients:
  7. Sugar 2 tsp
  8. Water 4-5 tsp
  9. Sweet chilli sauce 5 tsp
  10. Apple cider vinegar 1 tsp


  1. Peel the cucumber skin and cut it into pieces.
  2. Add salt to the cucumber, mix it well and set it aside in the fridge for 10-15 minutes.
  3. In the meantime make the dressing, take all the ingredients in a small sauce pan and mix it well.
  4. Turn on the heat and cook the sauce for 3-5 mins and let it slightly thicken. After this time, turn off the heat and let it cool down completely.
  5. Take the cucumber out from the fridge and drain off the salt water if any.
  6. Toss the cucumber and onion well, then mix them with the dressing.
  7. Top it with the peanuts, spring onion greens and serve.
