ABOUT Chilli Chicken (Semi Gravy) RECIPE

Chilli Chicken, an (Indo) Chinese dish where the batter coated deep fried chicken is later tossed with onions and peppers along with those mandatory soy sauces. The dish can be made completely dry or a semi gravy. The gravy is only from corn flour slurry and no tomato based.

Ingredients Serving: 2

  1. To Marinate the Chicken:
  2. 400 gms boneless chicken
  3. 1/2 tsp dark soy sauce
  4. Salt as needed
  5. 1/2 tsp black pepper powder
  6. 1 tsp Paprika / Red chilli Powder
  7. 2 tbsp corn flour
  8. 2 - 3 tbsp Plain Flour / Maida
  9. 1/2 egg (or just one egg white)
  10. For the Sauce:
  11. 2 tbsp Oil
  12. 1 tbsp Garlic (finely chopped)
  13. 1 tsp ginger (finely chopped)
  14. 1 small onion (sliced)
  15. 4 - 5 Green Chillies (Sliced)
  16. 1/4 cup Spring Onions (White part)
  17. 7 - 8 White Mushrooms (sliced) (optional)
  18. 1 cup sliced bell peppers (any color)
  19. 1 tsp Dark Soy sauce
  20. 3 tsp Light Soy Sauce
  21. 2 tbsp Tomato Sauce/Ketchup
  22. 1 tbsp chilli sauce
  23. 1 tsp Vinegar (White wine / Rice vinegar, etc)
  24. Salt as needed
  25. 1/2 tsp Pepper powder (Black / White)
  26. 2 tbsp corn flour
  27. 1 cup water
  28. 1/4 cup Chopped Green Spring Onions (to garnish)

Instructions

  1. Wash the chicken well and marinate with the ingredients mentioned for 15-20 minutes.
  2. Heat enough oil to deep fry the chicken, then fry them in batches until they are cooked and turn brown.
  3. Heat around two tbsp oil in a wok/kadai, add in the chopped garlic, onions, scallions, green chillies and saute them well.
  4. Once the onion is sauted well, add the sliced mushrooms and fry them for 2-3 minutes. Then throw in the peppers and saute them all together by adding salt and pepper.
  5. Mix all the sauces and vinegar together in a small bowl and add this to the wok. Add the fried chicken also to the wok and toss it well so that the chicken is well coated in the sauces.
  6. Mix the corn flour with a little water to make a slurry, then add this to the chicken. Allow the corn flour slurry to cook and turn glossy, then add in the chopped spring onion and turn off the stove.
