ABOUT Thai Basil Chicken (pad kra pao gai) RECIPE

An easy and quick yet a spectacular chicken recipe served with rice and fried eggs.

Ingredients Serving: 2

  1. 250 gms chicken (boneless)
  2. 3 - 4 Thai Red Chillies
  3. 4 - 5 Garlic cloves (Bigger ones)
  4. 1 tbsp oil
  5. Salt as needed
  6. 1 small red bell pepper (chopped)
  7. Handful of thai holy basil/ Sweet Basil
  8. 1 egg + 2 tbsp oil (for frying)
  9. Steamed Rice to serve
  10. For the sauce:
  11. 1 tsp oyster sauce
  12. 1 tsp Fish Sauce (optional)
  13. 1 tsp light soy sauce
  14. 1/2 tsp Dark Soy sauce
  15. 1/2 tsp Sugar (preferably palm sugar)

Instructions

  1. Crush together the thai chillies and garlic coarsely (preferably with a mortar and pestle). Wash it well and chop the chicken into tiny pieces.
  2. Heat oil in a wok, add in the crushed garlic-chilli mixture to it. Saute for a few seconds until it's fragnant on a high heat, then add in the chicken.
  3. Stir fry the chicken for 3-4 minutes on a high heat until it's fully cooked. Meanwhile prepare the sauce for the stir fry by combining all the ingredients in a small bowl.
  4. Add the sauce to the chicken and toss it well. Throw in the chopped peppers and continue stir frying on a high heat for another two minutes.
  5. Toss the basil in to the pan and combine it well. Then turn off the stove and remove it from the heat so that the basil is not overcooked.
  6. For the fried egg, heat 2-3 tbsp oil in a pan/wok and pour the egg carefully in the oil as it's almost like deep frying. You don't have to flip the egg. Once it turns crisp on the sides and cooked, turn off the stove.
  7. Serve it with hot steamed rice (preferably Jasmine rice) and the fried egg. Your pad kra pao gai is ready to dig in!
