Ingredients Serving: 4

  1. Paneer 250 gm
  2. Onion 2 medium
  3. Capsicum 2 medium
  4. Green chillies 5-6
  5. Garlic cloves 3-4
  6. Corn flour 2-3 tsp
  7. Soya sauce 1 tsp
  8. Ketchup 1 tsp
  9. Salt to taste
  10. Vegetable stock 1 cup
  11. White vinegar 1/2 tsp
  12. Oil to deep fry

Instructions

  1. Cut the paneer in 1 inch cubes and sprinkle 1 tsp corn flour over it. Toss the paneer lightly to coat the corn starch .
  2. Heat sufficient oil in a kadahi. Once the oil is medium hot, add in the paneer pieces and fry till they are golden brown. Then remove on an absorbent paper.
  3. Cut the onion into 8 pieces and remove the smaller inner pieces. Then cut each capsicum into 8 pieces and deseed, then cut the green chillies into slices and set aside.
  4. Dissolve the remaining cornflour, ketchup and vinegar in the vegetable stock and set aside.
  5. Heat 2 tsp oil in a pan. Add in the crushed garlic to the hot oil, then add in the onion, capsicum, green chillies and toss on a high flame for 30 seconds.
  6. The vegetables should be cooked but crisp. Add the salt, paneer, soya sauce and toss it well, then add in the corn slurry over high heat.
  7. Stir and cook till the sauce is thick enough to coat the paneer and the vegetables.
  8. Serve it hot.
