ABOUT Pad Thai RECIPE

A vegetarian version of Pad Thai, a dish from Thailand, with loads of veggies that is topped generously with salted crushed peanuts.

Ingredients Serving: 2

  1. 1 packet Pad Thai Noodles
  2. 2 nos Bok choy, chopped
  3. 1/2 of Green and Red bell pepper, sliced
  4. 10 nos Mushroom, chopped
  5. 1/2 cup Bean sprouts
  6. 1 no Onion, sliced
  7. 3 pods Garlic, chopped
  8. 1 tbsp Ginger, chopped
  9. 3 nos Thai red chillies, chopped
  10. 1/2 cup Salted peanuts, crushed
  11. 2 tbsp Soy sauce
  12. 1 tbsp Lemon juice
  13. 2 tbsp Brown Sugar
  14. 2 tbsp Oil
  15. Salt as required

Instructions

  1. Cook the pad thai noodles as per the instructions on the packet. Then drain and keep aside.
  2. Heat a large pan/wok, add oil to heat, then saute the onions, garlic, ginger, chillies, bok choy, mushrooms, sprouts, peppers, salt and toss it well.
  3. Add the rice noodles and mix it well, then add in the soy sauce, lemon juice, brown sugar, give it a good toss, then add in the peanuts.
  4. Serve it instantly for best taste.
