ABOUT Chicken Manchow Soup with Fried Noodles RECIPE

Winter is slowly knocking on our doors and nothing feels better than a hot bowl of soup on a cold winter evening. This soup is one of the most common street food dishes in Mumbai and all across India. Although the restaurants mostly add MSG (Ajinomoto) in it but the recipe I’m sharing is free of it. It is very healthy and you can make it healthier by adding more vegetables and it's a good way of tricking kids into eating a lot of veggies.

Ingredients Serving: 5

  1. 1 cup boiled and shredded chicken
  2. 4 cups chicken stock
  3. 2 eggs
  4. 1 and 1/2 tbsp garlic (finely chopped)
  5. 1 and 1/2 tbsp ginger (finely chopped)
  6. 2 green chillies (finely chopped)
  7. 1 small onion (chopped)
  8. 1/2 cup cabbage (finely chopped)
  9. 1/2 cup carrot (finely chopped)
  10. 2 tbsp soya sauce
  11. 2 tbsp red chilli sauce
  12. 1 tbsp vinegar
  13. 2 tbsp oil + for frying the noodles
  14. Salt and pepper to taste
  15. 2 tbsp + 2 tbsp cornflour
  16. Some boiled noodles 1/2 bowl
  17. Chopped coriander leaves, handful

Instructions

  1. To make the fried noodles, cover the boiled noodles with 2 tbsp of cornflour and fry it in the hot oil. Remove once golden brown in colour.
  2. Heat oil in a pan, add in the ginger, garlic and green chillies. Saute on a high flame for a minute.
  3. Now add in the chopped onions and saute for 2 minutes. Then add in the cabbage and carrots and saute for 2 more minutes.
  4. Add in the shredded chicken and saute. Now add in the soya sauce, chili sauce, vinegar, salt and pepper.
  5. Pour in the chicken stock and bring it to a boil. Take 2 tbsp cornflour and add very little water, add this paste to the boiling soup and wait till it thickens.
  6. Beat the two eggs and add it to the soup. Let the eggs cook for 2 minutes.
  7. Serve the soup hot with some chopped coriander leaves and fried noodles.
