ABOUT Paneer Schezwan Stir Fry RECIPE

We always look for improvising and innovating traditional and contemporary dishes in order to bring out something new which appeals to our taste buds and is healthy too. So when this original Schezwan recipe came to me, I immediately started thinking of ingredients and vegetable to add in it in order to make it a healthy side dish which could be relished by one and all. I guess I need to patent my recipes soon.

Ingredients Serving: 4

  1. Paneer: 200 gms
  2. Green peas: 50 gms
  3. Capsicum: 2 Medium
  4. Carrot: 1 medium
  5. French beans: 100 gms
  6. Onions: 2 medium
  7. Baby corns: 3-4
  8. Mushrooms: 2-3
  9. Spring onion leaves : For garnishing (optional)
  10. Green chillies 2-3
  11. Garlic pods: 6-8
  12. Schezwan sauce as per spice needed
  13. Tomato chilli sauce 1 tbsp
  14. Corn flour: 1 tbsp
  15. Salt as per taste
  16. Oil: 1 tbsp Canola or any other

Instructions

  1. Chop the Paneer, Capsicum and Onions in 1/2 inch cubes. Then cut the carrot into thin slices but not juliennes.
  2. Slice the green chillies and french beans in cross patterns and dice the garlic pods. Also chop the mushrooms and baby corns. Finely chop the spring onion leaves for garnishing, this is completely optional.
  3. You can use boiled potatoes instead of paneer and chicken cubes if you want a non-veg dish.
  4. Heat a frying pan or wok and add in 1 tbsp canola oil (preferable). You can use other regular oil if canola is not available.
  5. Saute the onions, garlic and green chillies in it. Then add in the carrots, baby corns, french beans and stir fry for about 2-3 mins on a medium to low flame.
  6. Reduce the flame to low and add in the capsicum and paneer cubes. Cover and cook for 2 mins.
  7. Remove the lid to add the sauces along with the green peas and salt, now give it a gentle stir.
  8. Cover and cook it again for a minute, then add in the corn flour mixed in a small quantity of water. The cornflour will give a thickness to the juices left by the vegetables.
  9. Garnish with grated cheese or spring onions or just serve as it is.
