ABOUT Uyghur Mutton Polo RECIPE

Uyghur Mutton Polo is a Chinese cusine dish, it is usually made with lamb. It's one of the popular cuisines made during weddings and other such cultural ceremonies. It is also called as Uyghur Mutton Pilaf. This cuisine is a blend of hot and sugary flavours that will surely please your palate.

Ingredients Serving: 2

  1. 250 gm mutton
  2. 2 cups rice, soaked
  3. 4 garlic cloves
  4. 1 medium-sized onion, sliced thinly
  5. 2 carrots (medium-size) juliennes
  6. 3/4 tsp cumin powder
  7. 3/4 tsp sugar
  8. Salt according to taste
  9. 1 and 1/2 tbsp refined oil
  10. 4 dried red chillies
  11. Water as required

Instructions

  1. Heat refined oil in a wok. Add the garlic cloves into the wok and fry till they turn golden.
  2. Next add in the chopped and washed mutton pieces, then stir fry for 4-5 minutes. Adjust the flame from medium to low heat.
  3. Next add in the onions and fry for 2 minutes. Then add in the carrot juliennes and fry for 3-4 minutes. Keep stirring.
  4. Add salt as per taste along with 3 glasses of water. Bring the curry to a boil.
  5. Now, add in the cumin powder, sugar and dried red chilli. Close the lid of the wok and let it cook on a low flame for an hour. Stir in between.
  6. Open the lid and make room for rice in the middle of the wok. Arrange all the mutton pieces on the side of the wok. Add the soaked rice in the center. The curry water should be above the rice.
  7. Close the lid and let it cook for 10 minutes on low flame.
  8. By now the rice will become al dente. Gently mix the rice with the mutton.
  9. Put a griddle on the flame and put the mutton pilaf wok over it. Cover the wok with a lid and let it cook for another 20 minutes.
  10. Serve this Ughyur Mutton Polo or Pilaf hot for best taste.
