Ingredients Serving: 4

  1. 1) INGREDIENTS FOR VEGETABLE HAKKA NOODLES
  2. Boiled Noodles 1/2 kg
  3. Carrot in juliennes 2
  4. Capsicum in juliennes 2
  5. Red chilli 1
  6. Garlic minced 1 tsp
  7. Ginger 1/2 tsp
  8. Onion sliced 4
  9. Chinese cabbage 1/2 cup
  10. Spring onion in juliennes 3
  11. Veg stock 2 tbsp
  12. Soya sauce 2 tbsp
  13. White pepper 1 tsp
  14. Salt to taste
  15. 2) INGREDIENTS FOR SZECHWAN RICE
  16. Rice 1 cup
  17. oil 2 tbsp
  18. Star anise 1
  19. Dry Red chilli 1
  20. Szechwan peppers 2
  21. Medium sized onion 4
  22. Cubed carrots 1/2 cup
  23. Cubed french beans 1/2 cup
  24. Coloured capsicum 1/4 cup
  25. Spring onions 2 to 3
  26. Soya Sauce 1 Tbsp
  27. Rice vinegar 2 tbsp
  28. Ajinomoto 1/2 tsp
  29. Salt to taste
  30. sugar 1/4 tsp
  31. Five spice powder 1 tsp
  32. 3) INGREDIENTS FOR VEGAN POTSTICKERS WITH MUSHROOM AND TOFU RECEPI
  33. Olive oil 2 tbsp
  34. Crumbled tofu 1 block
  35. Mushroom diced 1/2 cup
  36. Cabbage 1/2 cup
  37. Minced ginger 2 cloves
  38. Soy Sauce 2 tsp
  39. Sesame oil 1 tsp
  40. Red pepper flakes optional
  41. Fresh cilantro 2 tbsp
  42. Salt to taste
  43. Wonton sheets as per requiement
  44. 4) INGREDIENTS FOR RICE MANCHURIAN
  45. For balls
  46. Grated cabbage 1 cup
  47. Grated carrots 1 cup
  48. Capaicum finely chopped 1
  49. Onion chopped 1
  50. Garlic minced 1 tbsp
  51. Ginger minced 3 tbsp
  52. Green chillies slit 3
  53. Soy sauce 3 tbsp
  54. White pepper 1/2 tsp
  55. Cornflour 2 to 3 tbsp
  56. Salt to taste
  57. Boiled rice 2 cups
  58. Water 5 Cups
  59. Oil for frying
  60. For gravy
  61. Chilli oil 2 tbsp
  62. Garlic 4 tbsp
  63. Ginger 3 tbsp
  64. Onion chopped 1/2 cup
  65. Corn flour dissolved in water 3 tbsp
  66. Ajinimoto 1/2 TSP
  67. White pepper 1 tsp
  68. Salt to taste
  69. Vinegar 1 tsp
  70. 5) INGREDIENTS FOR SURPRISE CUTLETS
  71. Cabbage 1/2 cup
  72. Carrot 1/3 cup
  73. Capsicum 1 cup
  74. Soya Granules 1 cup
  75. Salt to taste
  76. Onion finely chopped 1
  77. Green chillies 2
  78. Coriander
  79. Bread crumbs 1 cup
  80. Oil for shallow frying
  81. 6)INGREDIENTS FOR RIVIERA STUFFED TOMATOES
  82. Rice boiled 1 cup
  83. Pea 1/2 cup
  84. Cabbage 2 tbsp
  85. Onions 1
  86. Garlic 3 tbsp
  87. Cheese as per requirement
  88. Salt to taste
  89. Tomatoes scooped 5
  90. Cream 3 tbsp
  91. Chilli flakes 2 tbsp
  92. oil 2 tbsp
  93. 7). INGREDIENTS FOR SIZZLING EFFECT
  94. Sizzler plate 1
  95. Aluminum foil
  96. Cabbage leaves
  97. Ice chilled water

Instructions

  1. 1) PROCEDURE FOR VEGETABLE HAKKA NOODLES
  2. Boil noodles
  3. Heat Chinese wok n add oil
  4. Add whole red chilli , garlic , saute 10 second
  5. Add carrots n capsicum. Toss well
  6. Add vinegar n soya sauce
  7. Toss very well
  8. If noodles seem dry add veg stock
  9. Mix well
  10. Garnish with spring onion greens and serve
  11. 2) PROCEDURE FOR SZECHWAN RICE
  12. Boil rice
  13. Heat oil..add star anise.. After 2 minute..remove anise
  14. Add dry red chilli n Sichuan pepper
  15. Add ginger, garlic, vegetables ,toss well
  16. Add soya sauce..
  17. Add rice n remaining seasoning
  18. Toss on high flame
  19. Add salt to taste
  20. Add five spice powder n mix well
  21. Serve hot
  22. 3) PROCEDURE FOR VEGAN POTSTICKERS WITH MUSHROOM AND TOFU
  23. Saute tofu mushroom ,cabbage in olive oil
  24. Add ginger n garlic
  25. Saute
  26. Add remaining pepper n seasoning
  27. Cook for 5 minutes
  28. Remove from heat n cool
  29. Place 1 tbsp of mixture into wonton wrapper
  30. Fold it as you wish.. Any shape that you like
  31. Now steam it .. The same way as we steam momos
  32. 4) PROCEDURE FOR RICE MANCHURIAN
  33. Boil carrot ,cabbage,beans ,cauliflower for half a minute
  34. Drain them over a muslin cloth
  35. Add in spring onions,onions,capsicum,ginger,Garlic,
  36. Squeeze water
  37. Add in rice,salt,all seasoning n sauces ,cornflour, mix all
  38. Make balls n fry
  39. Take wok..add oil
  40. Add garlic n ginger
  41. Saute 2 minutes
  42. Add onion, green chilli, stir for a minute
  43. Add sauces to stock
  44. Add salt
  45. Add cornflour paste
  46. Cook all for 2 minute
  47. Adjust seasoning as per taste
  48. Serve hot with balls in gravy... Garnish spring onion green
  49. 5). SURPRISE CUTLETS
  50. Mix all the ingredients
  51. Shape it into a cutlet form
  52. Shallow Fry in oil
  53. 6). RIVIERA STUFFED TOMATOES.. Take a wok..add oil
  54. Add in veggies.. Saute little bit
  55. Add in peas
  56. Add in rice
  57. Add in all seasoning
  58. Cook for 4 to 5 minutes
  59. Switch of flame
  60. Add in cream n cheese
  61. Stuff it in tomato
  62. Top it with more cheese
  63. Bake it at 180 C for 10 to 15 minutes
  64. 7 ) PROCEDURE FOR SIZZLING
  65. Take an iron plate of sizzler
  66. To its base.. Add in aluminum foil
  67. Above it... Cover it with cabbage leaves.. 3 to 5 layers
  68. Then.. Heat it for around 20 minutes
  69. Now start placing all your cooked stuff
  70. Let it heat for another 10 minutes
  71. Then.. Put the iron plate on wooden tray
  72. Take it to ur serving table
  73. Add in ice chilled water
  74. Enjoy the sizzling sound.
