ABOUT Rice Papper Pockets ( A Vietnamese Spring Rolls) RECIPE

With shredded chicken and vegetables these gluten free Rice paper rolls are a refreshing appitizer.

Ingredients Serving: 4

  1. Rice paper sheets 16 ( roti sized)
  2. Chicken boiled and shredded 1 cup
  3. Purple cabbage 1 cup ( cut in long stripes.)
  4. Carrot chopped think long strips 1/2 cup
  5. Mint leaves a bunch ( 1 cup leaves)
  6. Capsicum 2 finely chopped
  7. Spring onions 1 cup
  8. White onion thin slices 1/2 cup
  9. Olive oil 1/2 teaspoon
  10. Salt 1/2 teaspoon
  11. Pepper powder 1/2 teaspoon
  12. Ginger cut in long stripes 1 tablespoon
  13. Coriander leaves finely chopped 1 tablespoon
  14. Oregano 1 teaspoon
  15. Paprika powder 1 teaspoon ( optional )
  16. For dipping sauce
  17. Sesame oil 3 tablespoon
  18. Peanut butter 3 tablespoon
  19. Sugar or honey 3 t easpoon
  20. Lemon juice 2 teaspoon
  21. Soya sauce 3 teaspoon
  22. White vinegar 2 teaspoon
  23. Black pepper 1/2 teaspoon
  24. Crushed garlic cloves 4
  25. Cayenne pepper 1/2 teaspoon

Instructions

  1. Heat olive oil and saute all vegetables except mint for a minute. Let it cool.
  2. Add salt , pepper, oregano and paprika powder.
  3. Mix all ingredients to make a peanut dipping.
  4. Keep warm water handy. Take a rice paper sheet. Dip it in warm water just for 2 seconds and put it on a kitchen towel.
  5. Take the sheet on a work surface. Put 7 to 8 mint leaves on it.
  6. Put some shredded chicken and vegetables.
  7. Fold 1/3 of a sheet. Than fold from two sides and roll tightly.
  8. Serve with a dipping sauce.
