Vegan Red Thai Curry

Ingredients to make Vegan Red Thai Curry

  • mushrooms 8
  • Green bell paper 1/4 cup
  • carrot 1/2 cup
  • Baby corn 4
  • Red onion 1/2 cup
  • Palm sugar/brown sugar/jaggery 1 teaspoon
  • Vegetarian strir fry sauce or soya sauce 1 teaspoon
  • Red thai curry paste 2 1/2 teaspoon
  • coconut milk 1 cup
  • Vegetable stock/water 1 cup
  • Pan fried firm tofu or paneer 150 grams
  • salt as per the taste

How to make Vegan Red Thai Curry

  1. Heat the coconut milk and add red thai curry paste to it.
  2. Mix it well and let it cook until oil separate on top. (Some bands of coconut oil doesnt separate oil even after cooking so if yours are same, dont worry. cook it for 5-7 minutes and proceed further)
  3. Now add palm sugar and mix it until it dissolves.
  4. Add all the vegetables along with salt and let it cook for next 5-7 minutes on medium flame with covered pan.
  5. Add vegetable stock at this point and add pan fried firm tofu to it once is starts to boil.
  6. Cover it and cook it for final 2 minutes.
  7. Enjoy it hot with rice.

My Tip:

We can add the veggies according to our choice.
