ABOUT Veg Grilled Fried Rice with Chilly Grilled Chicken Breast RECIPE

This was my innovation 6 years ago. Do not how many times since than I have made this and everytime its a big success amongst my family and friends.

Ingredients Serving: 4

  1. For Fried Rice :-
  2. 2.5 cup boiled basmati rice
  3. 1 big size capsicum cut into round
  4. 2 teaspoon finely cut corriander
  5. 2 medium size onion cut into round
  6. 1 big size tomato deseeded and thinly sliced
  7. 1 teaspoon light soya sauce
  8. 1 teaspoon red chilly sauce
  9. salt to taste
  10. 1/4 + 1/2 teaspoon of vinegar
  11. 1/4 teaspoon black pepper powder
  12. pinch of ajinomoto
  13. 1 teaspoon red chilly powder
  14. For Chicken :-
  15. 2 chicken breast each cut into 4 pieces
  16. 1/2 teaspoon light soya sauce
  17. 1 tablespoon plain yogurt
  18. 1/2 tablespoon red chilly powder
  19. pinch of black pepper
  20. salt to taste
  21. pinch of garam masala powder
  22. oil for grilling
  23. 1/4 teaspoon of cornflour

Instructions

  1. Marinate the chicken pieces with all the above ingredients, cover and keep it aside (not in the fridge) for about 30 minutes.
  2. Boil rice with 1/2 teaspoon vinegar and keep it aside (make sure you drain the water).
  3. In a grilling pan add the chicken pieces one by one with leaving the extra sauce/water keep that aside.
  4. Once one side is done flip it over and let it cook on a slow flame. Once its nice and tender remove from the pan.
  5. In the same pan add 3 tablespoon of oil and add onion, capsicum, tomato and the left over sauce from the chicken, saute until soft.
  6. Than add in red chilly powder, chilly sauce, black pepper and salt. Saute until everything is nicely mixed.
  7. Throw in the boiled rice followed by soy sauce and ajinomoto mix everything nicely than throw in vinegar and mix well again and turn off the stove than add in finely cut coriander leaves.
  8. Dish out the rice in individual plates put chicken either on top or at the side with either salad or chilly sauce or schezwan sauce.
